The Easiest Weeknight Chicken

This is the easiest chicken you will ever make. This is a weekly staple in our house. My kids call it “the good chicken” and are constantly asking for it. Sometimes this works against me, because if I dare make a chicken any other way I catch some serious heat. 

It’s totally fine with me though, because this is honestly one of the easiest meals on the planet. To make the easiest weeknight chicken on the planet, you only need 6 ingredients and the prep time is less than 5 minutes. Throw those little bad boys into the the oven for just around an hour depending on what chicken you are using, and that is it. This gives me time to throw them into the oven and keep moving around the house or finish working.

After about an hour or so, the skin gets nice and crispy and the chicken stays so juicy. The best part though? There is almost no clean up. Just throw the pan right in the dishwasher. Something about an easy cleanup that just gets me going (god I’m old). Ready? 

Ingredients

Prep 

Preheat oven to 350.

Take out two oven safe cooking dishes or trays.  Whatever your preference.  Spray them with cooking spray. 

Then place your chickens with a little breathing room in each pan.  Sprinkle each chicken with a little bit of the salt, pepper, onion and garlic powder.  I like to be a little loose with the onion and garlic powder.  Then drizzle the olive oil over each chicken making sure that each chicken gets a little coating. 

Put it in the over.  Check on it in an hour.  Sometimes depending on their size, the chicken thighs may be done at this time.  If not let them stay another 10-15 minutes.  You will know they are done with the skin looks golden and crispy.  

Serve with just about anything you like.  Enjoy!

* you can use any part of chicken you like. I think it works best on bone so it doesn’t dry out.

If you want to use boneless breast, roast for less time. Usually ready in 35-45 minutes.

You can also use a bone in chicken breast and just roast it a little longer it usually ready in about 75 minutes.
